Copper pans, besides being attractive in the kitchen, are a chef's favourite pan. Modern copper pans are either thick copper on the outside bonded to stainless steel or copper and stainless steel with a layer of aluminium between to provide excellent heat conducting. Handles are brass or stainless steel. Do not dishwash. The copper can be cleaned with metal cleaner or the traditional salt and lemon juice or vinegar. A joy to use.
