Professional grade pans spun from pure aluminium which is a very good heat conductor. The pans have curved internal corners so that food does not become trapped, making for easy cleaning. If aluminium is machine washed it is likely to discoulour. Best to soak after use and wash by hand. Discolouration from cooking liquids is easily removed with soap filled wire-wool pads. The plastic moulded handles are heat insulating. Do not leave handles over a heat source.
